Chorizo and Halloumi Jambalaya

Ingredients

250g Tilda Easy Cook Long Grain Rice

250g Block of Halloumi Cubed

1 Chopped Onion

1 Green Pepper, 1 Red Pepper Chopped

2 Tsp of Pureed Garlic

225g Chorizo Ring, Sliced

½ Tsp Smoked Paprika

½ Tsp Cayenne Pepper

½ Tsp Dried Oregano

400g Tin Chopped Tomatoes

300ml Chicken Stock

Olive Oil, Salt, Pepper

Directions:

1. Dice the halloumi, fry until golden, and set aside. Cook the chorizo until crispy, setting aside also.

2. Cook the chopped onion, chopped peppers, and grated garlic until softened.

3. Add spices and cook until fragrant.

4. Add the tomatoes, rice, halloumi, chorizo and chicken stock and cook for 12 mins with a lid.

5. Let sit for 10 mins.

6. Serve and enjoy
