Chicken Fried Rice

  • 3 chicken breasts, cut small
  • 2 eggs
  • Pre cooked rice
  • Sweetcorn
  • Peas
  • Small red onion chopped up small
  • Soy sauce
  • Prawn crackers
  • Sweet n sour sauce
  • Spring onion

Method

Boil peas and sweetcorn put aside

In a large pan, cook the eggs and put aside

Chop small onion and fry then put aside

Cut up chicken, cook until golden brown.

Add rice, onion, peas and sweetcorn into pan and heat and add small soy sauce to bind

Once warm and well mixed, add the egg and mix through.

Add soy sauce as needed

Serve and garnish with green onion tops

Serve with prawn crackers and sweet n sour sauce
