Ingredients:
4 salmon fillets (about 6 oz each)
1 cup pineapple
1/4 cup honey
2 tbsp soy sauce
1 tbsp olive oil
2 Tsp garlic puree
1 Tsp ginger puree
Salt and black pepper to taste
Green onions for garnish
Lime wedges (for serving)
Instructions:
Prepare the Marinade:
In a medium bowl, whisk together the honey, soy sauce, olive oil, minced garlic, grated ginger, salt, and black pepper until well combined.
Marinate the Salmon:
Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is coated. Add the diced pineapple on top. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Preheat the Grill or Oven:
If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 200°C and line a baking sheet with parchment paper.
Cook the Salmon:
Grilling: Remove the salmon from the marinade and place the fillets directly on the grill. Cook for about 4-6 minutes on each side, or until the salmon flakes easily with a fork. Brush with extra marinade during grilling for added flavor.
Baking: Place the salmon fillets and the pineapple on the prepared baking sheet. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve:
Remove the salmon from the grill or oven. Garnish with green onions if desired. Serve with lime wedges on the side.
